I have this secret that I want to let you in on. It’s a big deal. Very hush hush.
You can make cookies in the microwave. I know. I couldn’t contain myself either.
Okay, so the bad news is that I may have potentially blew that secret when I made cookies in the microwave last time, but hey. No biggie. What is a secret if no one knows about it? Haha, now you’re confused. Let’s change the subject.
When I did find out this magical secret, I became a little cookie fiend. If I have ever learned one thing in my years of life, it’s that making grocery lists in the name of frugality is stupid. If I have ever learned a second thing in my years of life, it’s that you should always add peanut butter to everything. Especially cookies.
So if you take our little secret and the second thing I have earned in life, you get this… masterpiece.
Almond milk, meet your new dunking love.
“All for One” Peanut Butter Cookies
Cookies. Peanut butter flavored, to be exact. In the microwave. Just for you. I say no more.
Adapted from my World’s Healthiest Peanut Butter Cookie
Makes 1 serving (10 cookies!)

Serving size: 1 recipe (10 cookies)

Fat: 4 grams
Ingredients
1 tablespoon of peanut butter (I used Better N Peanut Butter, for a lower fat option.)
3 tablespoons of unsweetened almond milk, or milk of choice, divided
2 tablespoons of coconut flour
pinch salt
1/4 teaspoon vanilla extract
1/8 teaspoon baking powder
sweetener to taste (I used one packet of stevia.)
Directions
Add peanut butter and 1 tablespoon almond milk into a small bowl or cup, and nuke for about 30 seconds, or until peanut butter is melted. Give the mixture a stir, and add in coconut flour. Stir in salt, vanilla extract, baking powder, and sweetener to taste. Add remaining almond milk, one tablespoon at a time, adding more or less as needed to create the perfect “doughy” consistency.
Drop dough by tablespoon or teaspoon, depending on how big you want them, on a greased microwave safe plate and flatten into cookie shapes. Microwave for 45 seconds to a minute, watching them carefully, looking and smelling for done-ness. Let cool for a minute or two to allow the cookies to firm up before inhaling them all.
