My name is Hilliary and I blog over at Happily Ever Healthy. A blog all about healthy living, and the crazy day-to-day things that go on in my life!
When Kelly sent out an email asking for a guest blogger I immediately knew what I wanted to talk about! Food! Especially Pinterest recipes! Kelly has amazing recipes on her blog should I dare mention homemade cookie butter? Delicious! And her writing, stories and humor keep me coming back for more! Aaaw. Love you, Hillary!
Over at my blog right now I am doing a little food challenge involving Pinterest. You see I got a bit pin happy and ended up with over $1,000 recipes pinned on my food board! Yikes! My pin board has become a bit of a black hole of recipes. Each week I pick 3-5 new recipes off my pin board to feature on my blog and I guess test out! You could say its like a virtual version of Julie and Julia. I then review the recipes and keep the ones I love and get rid of the ones I know I will never make again!
So far it is a fun little challenge! And I have found some amazing recipes this way!
I thought it would be fun to share with you all some of my favorite recipes, recipes that I have discovered while cooking through my pin board! Are you ready?
Lets go!
1-I am a huge lover of roasted vegetables, I mean I actually crave them sometimes!
This stacked enchilada casserole was delicious, packed full of tasty roasted vegetables.
The sweetness of the sweet potatoes was balanced nicely with the spice of the salsa!
Make this!
2- I have already made this recipe twice, and the first time I made it there was no leftovers!
Love the flavors of this quiche. Perfect for brunch or dinner! Not a Feta fan? Sub in mozzarella and it is still delicious!
3- I love homemade quick breads! And since I am living at home right now (as I figure out what the heck I want to do with my life) I make homemade bread all the time. I am talking like every Sunday night I make 1-2 new loaves for the week! This (Almond Apple Sauce Bread-ELR) recipe is one my mom asks for every week!
Yes it is that good! I usually leave out the almonds and sprinkle the top with either homemade granola, or a local Minnesota Granola. Slather on peanut butter, Nutella, cookie butter and you have a combination that is heavenly!
4- Weeknights can be busy, and sometimes I don’t want to spend a ton of time preparing a delicious and healthy meal. That’s why I love this recipe from Cooking Light!
This meal came together in 30 minutes, and was delicious!
I used vegetarian sausage in place of the chorizo and was happy with the results!
5-And last but not least, lets discuss chocolate! Because who doesn’t love chocolate?
And did I mention this cake is no bake? Yes a No Bake Chocolate Cake from 101 Cookbooks! This cake is like eating just the middle of a decadent truffle! It is hard to stop at one slice. All it takes is 5 ingredients and 10 minutes to prepare, and the end results chocolate heaven!
