This is the crowning jewel in my cookie crown.
From now on, this is the it cookie. We will accept nothing less. 1 cookie = 25 calories of rich, chewy yet slightly crunchy, sweet yet slightly salty, peanut buttery perfection. This changes everything.

Ingredients
- 1/2 cup unsweetened applesauce, mashed banana, or butter
- 1/2 cup sugar OR erythritol
- 1/2 cup brown sugar OR erythritol plus 1 teaspoon molasses
- 1/2 cup peanut butter {use Better n' Peanut Butter for a lower fat version}
- 1 egg {or 1 1/2 teaspoon Ener-g egg replacer mixed with 2 tablespoons water}
- 1/2 teaspoon vanilla extract
- 1 cup white whole wheat flour {see note below for gluten free}
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone mat and set aside.
- In the bowl of a stand mixer, combine the applesauce or banana or butter, sugar or erythritol, brown sugar or erythritol plus molasses, and peanut butter. Beat together until thoroughly combined. Beat in egg or egg replacer and vanilla extract. Add in flour, salt, and baking soda and stir to combine.
- Drop the cookie dough by rounded teaspoon amounts onto the prepared baking sheet. Lightly flatten the balls in a criss cross pattern with a fork. To prevent it from sticking, lightly moisten the fork and coat it with flour before flattening the cookies. Bake in the oven at 350°F for 8-10 minutes. Let cool on wire racks and devour.
Notes
For a gluten/grain free option, use about 1-1/4 cups almond meal in place of the wheat flour. If the dough is too wet, add in more almond meal 1/4 cup at a time.
For a paleo version, use almond butter.
For a nut free version, use sunflower seed butter.
